Sweet & spicy beer can chicken

Sweet & spicy beer can chicken

Method :

I first roasted chook like this when I visited the USA – the steam from the beer creates probably the most amazingly juicy outcome.

Preheat the oven to 200ºC/400ºF/gas 6. Put off the chook from the fridge and depart apart to come as much as room temperature. Bash the rub ingredients to a great powder in a massive pestle and mortar, then drizzle the hen with olive oil. Sprinkle over the rub and use your hands to massage all these lovely flavours into the entire nooks and crannies.

Crack open the beer and pour out round two-thirds of it (or drink it!), then cautiously scale back the hen cavity onto the can so it looks love it’s sitting up. Role the hen so it’s upright on a roasting tray, then place in the oven and cook dinner for round 1 hour 10 minutes, or until golden and cooked by way of. To check it’s achieved, insert a knife into the thickest a part of the thigh – the juices must run clear.

Brush the chicken all over with the barbecue sauce, then return to the oven for another 10 minutes, or except dark and sticky. Meanwhile, finely slice the chilli and spring onions and select the coriander leaves. As soon as capable, carefully remove and discard the can, then carve up the fowl, scatter over the chilli, spring onions and coriander leaves, then serve.

Ingredients

  • 1 x 1.8 kg whole free-range chicken
  • olive oil
  • 1 x 330 ml can of beer
  • 2 tablespoons barbecue sauce
  • 1 fresh red chilli , deseeded
  • 1 bunch of spring onions , trimmed

Jemma's PB & J Cupcakes

Jemma's PB & J Cupcakes

Method

Preheat the oven to 170°C fan/375°F/fuel 5. Sift the dry cupcake materials and 1 pinch of satisfactory sea salt into a significant bowl, add the butter, eggs and peanut butter, then beat for 60 seconds with an electric mixer (I prefer the free-standing sort). Pour within the milk and whisk for 20 seconds, or except well mixed. Scrape down the edges of the bowl with a spatula, then supply the combination a final blast for 30 seconds to ensure it’s all integrated. Fill the paper cases two-thirds full with combination, but don’t trouble to soft it out. Bake for 20 minutes, or except they spring again when touched. Leave to cool rather, transferring to a wire cooling rack after 5 minutes.

In the meantime, make the peanut crumb. Location the peanut butter in a food processor, sift in the icing sugar and whiz for 1 to 2 minutes to make small, scrumptious crumbs, then set aside.

For the icing, beat the butter and peanut butter with an electric mixer for 5 to six minutes, or unless light and fluffy. Sift the icing sugar right into a tremendous bowl, then add to the butter in two stages, beating well between each. Pour within the milk and beat for a different three to five minutes, or until well combined. As soon as the cupcakes are cool, poke a gap into the center of each with a chopstick, twist to widen the gap, then use a piping bag to fill each one with a just right squeeze of jam. Enhance with the icing, top with a blob of jam, for those who like, and a sprinkling of peanut crumb to finish, then enjoy.

Tip Turning basic treats into cupcakes is one among my favorite matters to do and this is the celebrity of the show. Suppose free to make use of smooth or crunchy peanut butter – whichever you decide upon.

Mega veggie burgers

Mega veggie burgers

Method

Wrap the tofu in a easy tea towel, then squeeze and wring it out to put off the surplus liquid (about 4 tablespoons will have to come out – it’s messy, but relatively principal to do this for great burger texture later). Location the tofu in a bowl, scraping it off the tea towel. Crack within the egg, then add the breadcrumbs and Marmite. Combine and scrunch collectively fairly well with easy palms, then shape into four even-sized patties that’ll fit properly in your buns as soon as cooked.

Roughly chop the tomatoes and put into a dry non-stick frying pan on a excessive warmth with a pinch of black pepper, a splash of water and the vinegar. Squash the tomatoes with a potato masher, cook dinner for 10 to 15 minutes, or until thick and scrumptious, then tear in the basil leaves and season to perfection (I generally add a pinch of dried red chilli flakes too, for a kick). If you wish to plump up your buns, pop them into a warm oven for a couple of minutes.

In the meantime, finely slice or prep the entire salad veg. Subsequent, decide on the basil leaves right into a blender and blitz with all the other dressing elements and a pinch of salt and pepper except tremendous-tender. Location 2 teaspoons of oil in a enormous non-stick frying pan on a medium warmth. Pick the rosemary leaves into the pan in four piles, location the patties on high and cook for 3 minutes on each aspect, or until golden. Slice or grate the cheese, location on the patties, diminish the warmness to low, then duvet and leave to melt for 3 to four minutes. Unfold the tomato sauce into the buns, then sandwich the cheesy burgers and sliced gherkins inside of. Toss the salad with 1/2 the dressing (retailer the leisure for yet another day), serve alongside the burgers and revel in – thoroughly fantastic
